Leftovers Never Looked This Good: Lasagna Roll Makeover
BEFORE
Last week, I had random leftovers: some roasted veggies, a scoop of mashed potatoes, and half a jar of pasta sauce. None of it looked like a meal — just cluttered containers in the fridge.
AFTER
I blended the veggies into a chunky sauce, used the mashed potatoes as a cheesy ricotta hack, and rolled everything into lasagna noodles. Baked them with love, topped with a little mozzarella… and boom: Instant comfort food with zero waste.
